Edikang Ikong 🥣 Healthy Eating~Naija Style

Happy New Week Fam. How’s your new week? I’m sure it’s going well. What’s on your menu for today? What would you have for Lunch?

Okay Amigo.. I found something very interesting, yummy and.. my goodness 🤤🤤 can’t explain this but here’s the Holy dish 👉 Edikang Ikong. 

Edikang Ikong also known as Vegetable Soup, is a native soup of the people of Cross River State (Efiks) and Akwa Ibom State in the Southeastern part of Nigeria, commonly eaten in many countries due to its delicious taste and high nutritional content. Recognized as one of the healthiest soups in the country cause of its rich nutritional content;  Protein, Vitamin B1, B2 and E, Fiber, Folic acid, Carbohydrate, Calcium, Iron, Phosphorus, Selenium, Potassium.

This dish uses two main vegetables 👉 Pumpkin Leaves (Ugwu) and Waterleaf. In addition, there are other varieties which will be given in our recipe ingredients. The image says it all. Can’t wait, I’m so excited 💃💃

Alas, here we are. Let’s begin🥰

Recipe Ingredients

  • 1 medium stockfish (head)
  • 500g dried fish
  • 1 cup ground crayfish
  • Meat stock
  • Meat of choice (beef, kanda, shaki, cow intestines)
  • 1kg (5 bunch) Pumpkin leaves (Ugwu)
  • 500 g water leaves
  • 2 cups palm oil
  • 6-7 red bell peppers (pounded or crushed)
  • Salt to taste
  • 3-4 seasoning cubes
  • 1/2 cup chopped onions

Procedure

  1. Clean, wash, season and cook meat until tender
  2. Wash dry fish and stockfish with hot water, then add to meat.
  3. Wash and slice Ugwu leaves and water leaves separately 
  4. Add palm oil, salt and pepper to the meat.
  5. Cook for about 5-10 minutes, stir gently and add the water leaves.
  6. Allow to boil for about 3 minutes, then add the ground crayfish, pepper and seasoning cubes.
  7. Stir properly and allow to cook for 5 minutes
  8. Finally, add the Ugwu and stir, cover the pot half-way and allow to simmer for 3-5 minutes (adjust seasoning if necessary).

Your Soup is ready!

Serve with eba, amala, semovita or any swallow of your choice.
