Ladies and Gentlemen, I present to you a hearty and delicious meal, all the way from Nigeria. This is none other than our very own Nigerian Chicken Stew. 

Amazing! Fills your heart with so much warmth and desire to know. No need for a magic wand, here’s a wonder, just for you.🤗

But before we dive in, just know that there are lots of health benefits regarding this dish. It is rich in Vitamin A, contains Vitamin C, Calcium, Carbohydrate, Iron.. and so on. There’s more to gain, read on.

In my opinion, I advice people with health challenges, do not take more than one serving. Hope your menu’s a workable one. If you want a healthy menu, just ask for it and it will be granted. It’s Christmas after all, wishes will be granted, just ask. 

Also to every other person, in order to maintain a healthy living with no issues at all, do not make this dish often. Yeah, it’s crazy, I know. It is tempting 😂 but we’ve got to be moderate. Maybe once or twice a week. But no worries, more healthy food articles are coming, and so you need not worry fixing your weekly or daily menu.

Alrighty! Let’s get to business.

Recipe Ingredients

  • 1kg Chicken
  • Fresh tomatoes 500g (crushed)
  • Tin tomatoes 1 kg
  • Red bell peppers 4-5 large
  • Chilli peppers 4-5 large
  • Onion bulb 2 medium, diced
  • Garlic cloves 4, or 1tsp garlic powder
  • Ginger root 3 or 1tsp ginger powder
  • Seasoning cubes to taste
  • Thyme or Rosemary 2tsp
  • Curry powder 2tsp
  • Bay leaves 2
  • Chicken stock 1½- 2 Cups
  • Vegetable Oil (500ml)
  • Salt to taste

Instructions.

  1. Place the cleaned cut chicken into a pot, add chopped onions, garlic, ginger, thyme or rosemary, curry powder, seasoning cubes, pepper and salt to taste. Place on medium-low heat. Do not add water at the start, allow the chicken to cook in its juice for about 10 minutes, then you can add little water and cook until tender.
  2. Remove chicken from its stock, set stock aside and fry/grill chicken at 180ºC , then set aside.
  3. Blend the tomatoes, peppers, onions, ginger and garlic, pour into a pot, put on heat to reduce excess water and set aside.
  4. In another pot, heat up the vegetable oil, add some chopped onions, allow to heat for a few seconds, then add the tin tomato paste and stir fry for about 10 minutes.
  5. Pour in the boiled tomato-pepper mixture and fry until the tomato loses its sour taste. This will take some time, be patient. Stir constantly to prevent burning at the bottom.
  6. Add the chicken stock, a teaspoon thyme, a teaspoon curry powder, and seasoning cubes to taste. Stir properly and boil for 10 minutes .
  7. Then add the grilled or fried chicken and simmer for 10 minutes.

Your Nigerian chicken stew is ready! You can serve with plain boiled rice, boiled yam.. your choice. Enjoy!
