HEALTHY EATING ~ Naija Style 🍽

Growing up, I’ve always loved my mom’s beef stew. Such a great Cook. She does know how to burst one’s bubbles with her magic, making her own meals sooo unique 🤭

Well, we not only have Nigerian beef stew, but also chicken stew. However, this piece is wholly dedicated to the Nigerian beef stew.

The Nigerian beef stew has a great but simple combo made with the following ingredients:

  • 1kg fresh tomatoes
  • 75g canned tomato paste 
  • 500g beef 
  • 2 medium onion bulbs
  • Bell peppers
  • Stock cubes
  • Curry (1 tbsp)
  • Thyme (1 tbsp)
  • Salt to taste
  • Vegetable oil

Follow me as I reveal my mom’s secret 😉

Procedure:

  • First things first, wash and cut the beef into bite sizes. Place the beef in a pot and season with the stock cubes, bell peppers, chopped onion, curry, thyme and salt to taste. Allow it to cook in its own juice for about 5 minutes (using medium heat), add some water after that and cook until the meat is tender. You can either fry or grill the cooked meat, then set it aside and reserve the beef stock.
  • Next, wash and grind your tomatoes, peppers and onions. Pour the tomato mix into a pot and leave to boil until the consistency is thicker and the excess water is dried up.
  • Open up the canned tomato paste, scoop out its content into a bowl and dilute with little water, then set aside.
  • Heat up the vegetable oil, add some onion and stir, leave for about 10 seconds. Add the dried up tomato mix, diluted tomato puree and fry until the tomato loses its sour taste (this might take some time). Stir continuously to avoid burning.

NB: I intentionally didn’t give a specific measurement for vegetable oil because I believe some of us might be allergic to too much oil. As for me I could use a cup of vegetable oil or less or more, depending on what I want and how I want it. But in my opinion, I’d say if you are allergic to too much oil, you could use a cup or less.

  • Add the beef stock and cook for 10 minutes.
  • Finally, add the fried/grilled beef, adjust seasoning and leave to simmer for 5 minutes. You’ll notice at this point that the oil has risen to the top of the stew.

Your meal is ready! 

You can serve with plain boiled rice, boiled yam, cooked potatoes, boiled beans, boiled plantain, fried plantain.. oh I can’t wait to dig in 🤤🍴
