Pepper Soup is a delicious and popular Nigerian recipe. It is rich in Vitamin C (and as you know, bell peppers are responsible for that), less in fats and calories (depending on the protein used). It is such a versatile recipe as it can be prepared with different types of meat and fish. Thus there is the Chicken Pepper Soup, the Catfish Pepper Soup, the Goat Meat Pepper Soup, the Cow Leg Pepper Soup and the Assorted Meat Pepper Soup.

Here are the nutritional value of some protein, used in making Pepper Soup;

BEEF is a little higher in fat and contain more calories, whereas CHICKEN is richer in protein. Both are equal in the amount of cholesterol. Chicken meat is richer in most vitamins, Vitamin E, Vitamin K, Vitamin B1, Vitamin B3 and Vitamin B5, especially Vitamin A.

The most important vitamin that beef has more of is B12. And for those of you who are trying to avoid Cardiovascular Health problems, I advice you go for chicken pepper soup instead of beef, but that doesn’t devoid Chicken of its own risks on Cardiovascular Health.

COW LEG is a good choice for peppersoup as it contains high protein, calcium, amino acids, alongside important nutrients and minerals such as magnesium, phosphorus and selenium. The amino acids assists the body in resisting osteoporosis by boosting bone collagen and help reduce pain and inflammation.

OFFALS are very rich in Omega 3 fatty acids, antioxidants, Vitamin B, help maintain heart health and reduce blood pressure. They contain folate which is beneficial for pregnant mothers. They are usually source of high quality protein and help retain muscle mass.

CATFISH is a low calorie, high protein seafood that’s a great source of nutrients, including selenium, Vitamin B12, and Omega 3 and Omega 6 fatty acids.

But if you don’t want any of them👆👆, you can go for the non meat and fish version, known as vegan or vegetarian peppersoup which include the following ingredients;

yam slices, cauliflower, courgette or cucumber, carrot, broccoli, chopped basil or scent leaves, etc depending on what you want. In my next article I will give my own VEGAN PEPPERSOUP recipe.

But here, we’ll be dealing with Assorted Meat Pepper Soup (i.e beef, offals and cow leg), and trust me, you’ll soon be enjoying a hearty portion of proudly Nigerian food. Simply follow my easy step-by-step recipe.

Truly, Nigerian Pepper Soup is prepared with ‘secret’ ingredients that only most people know, such as Moms, Dads, Chefs, Cooks, Caterers, Restaurant Owners. Yes, the Pepper Soup ingredient which gives this recipe its unique aroma and taste, is truly the best kept secret. But no worries. I’ll give you my recipe. Also, you must know that this recipe is originally Spicy, but you can choose to make it less Spicy. Remember, it is called “Pepper Soup”😉

  • Assorted meat – Beef, Shaki (Tripe), Cowleg, Kidney, any other offal of your choice
  • 1 tablespoon red  chilli (crushed)
  • 2 tablespoon Bell Pepper (crushed)
  • 3 Stock Cubes
  • 1 or 2 litres of Water (depending on the quantity of your protein)
  • 1 handful Scent or Basil leaves
  • 1 tablespoon Crayfish
  • 1 big onion bulb

  1. Boil the offals and cut into bite size. (As a rule, boil offals seperately from beef.)
  2. Add the beef in a pot, add chopped onion, stock cubes, a little bit of pepper and salt and leave to boil.
  3. When beef is tender, sieve the stock into a pot
  4. Add the chopped assorted meat into the stock
  5. Add the crushed bell and chilli peppers.
  6. Add water, cover the pot and leave to boil for 20 minutes
  7. Add crayfish and allow to cook for like 5 minutes. Now you can add some scent or basil leaves and leave to boil for another 10 minutes. Serve hot and enjoy.

You can serve with the following

  • Plain boiled rice
  • Boiled yam
