Well, fortunately I’ll be eating a lot today 😉 But I’m no glutton 😂😂 No worries, I’m not alone🙂 I’ve got my family with me🥰🥰🥰 So yeah, we can all dig in🍴🥢

Let’s begin with our HealthyNaijaStarta 👉 Vegan Peppersoup 🥣

I made a promise I was gonna publish my own Beloved Nigerian Vegan Peppersoup Recipe❤️❤️ So… here we are. Please read on and be sure to try this dish for yourself and family 🥰🥰🥰 I guarantee you’ll fall in love with this. It is Super Healthy, nothing to worry about 😉

Okay Lovelies, let’s do this👌

First, I want you to know that anything is possible without animal protein. Research and Reality has proven that eating more vegetables than regular meat and others is Healthy. And as we know, people who consume more vegetables have less health issues, age less and so on.

In this dish, I’d like you to be more attentive to it’s seasoning because it is important and if anything goes wrong, might make you wanna throw up or feel sick as the case may be. So please be attentive🙏🙏 Thank you 🙂 Also remember, it is Spicy😉

RECIPE INGREDIENTS

  • 6-8 small potatoes(peeled and washed)
  • 1 large carrot(washed and cut)
  • Broccoli – one handful
  • 1 small red bell pepper
  • 1 large habanero pepper
  • 1½ tbsp. Nigerian pepper soup spice(optional)
  • ½ inch ginger
  • 1 clove garlic
  • 1 small onion
  • 1 handful basil (chopped)
  • Water
  • Vegetarian bouillon
  • Salt to taste

DIRECTIONS

  1. First blend the garlic, ginger, pepper and onion together.
  2. Put the potatoes and carrots into a pot. Pour in water to the level of the veggies and pour in the blended mixture.
  3. Season with pepper soup spice(if using), salt and bouillon to taste.
  4. Bring to a boil, using medium heat and cook until the potatoes and carrots are tender.
  5. Adjust seasoning if necessary, stir in the basil, and add the broccoli.
  6. Turn off the heat and cover the pot. No worries, the steam will soften the broccoli.
