Jollof Rice ~ Naija Style 🍽 By Victoria Francis.

JOLLOF RICE

This legendary African dish is a staple food throughout West Africa, most particularly in Senegal, Gambia, Nigeria, Ghana, Togo, Sierra Leone, Liberia and Cameroon. It brings families together around a colorful display of chewable deliciousness! Also, you’d be pressed to find a more popular party dish in West Africa!

Without fail, as this amazing dish traveled across borders, its recipe evolved into many variations. Today, it is the subject of very healthy competition on who makes the best Jollof, but since I am all about HEALTHY EATING Nigeria Style, I’m going to show you how to prepare a Healthy Jollof Rice, Naija style.

Here we go…
Recipe Ingredients
5 medium sized fresh tomatoes, roughly chopped
1 red bell pepper, roughly chopped
1 medium sized onion, medium dice, set aside
2 scotch bonnet peppers ( also called habanero peppers )
1 or 2 tbsp vegetable oil
3 tbsp tomato paste
2 cups of parboiled rice
2 1/2 cups of meat stock
Salt to taste
1/2 tsp curry powder
1/2 tsp thyme or rosemary
Stock cube
2-3 bay leaves
Water.
Recipe Procedure
Blend your tomatoes, red pepper, scotch bonnet peppers in a food processor or blender, make sure that everything is blended well.
In a medium sized pot, heat your oil on medium-high heat. Once the oil is heated, saut̩ your onions for about 10 Р15 seconds or more. Then add the blended tomato mixture and fry for about 2 Р3 minutes. Now add your tomato paste and allow to cook for about 30 minutes. Make sure you stir consistently so that the tomato mixture does not burn.
After 30 minutes, turn the heat down to medium, and add the meat stock. Mix and add your seasonings (salt, curry powder, thyme or rosemary and stock cube). Continue to boil for 10 minutes.
Add the parboiled rice to the pot. Mix it very well with the tomato stew. If you need to add water, please do. Add the bay leaves, cover the pot, and cook on medium to low heat for 15-30 minutes.
When all is said and done, turn off the heat and your Jollof Rice is ready😉!

You can serve with fried plantain and any desired meat of your choice.

You can also garnish your Jollof rice with sautéed vegetables like carrots and green beans or green peas.. as you wish❤️❤️😉😉❤️❤️
