what to eat! what to eat!! what to eat!!! 🤔🤔🤔

Hmmm, not the usual🤕 what else? 🙈🙈🙈

Had to take a walk down memory lane and I stumbled upon this unique Naija delicacy 👉 Ofada rice.

Ofada rice is a popular Nigerian rice variety, also called Unpolished rice as it is rice in it’s natural state and without genetic modification. It is very healthy and much more healthier than white rice and is identified as Brown rice. 👇👇

It is accompanied by Ofada stew.

Ofada stew borrows its name from Ofada Rice. This stew or sauce originates from the Western part of Nigeria, has a very unique, addictive, enticing flavor. It is very tasty and Spicy cause of the combination of peppers in it. Can’t say much about this, it is better experienced than said😉

 RECIPE INGREDIENTS

  • 6 large bell peppers
  • 3 scotch bonnet peppers
  • 3 large onion bulbs
  • Cooked meat (goat meat, beef, chicken.. your choice)
  • 80 grams cleaned smoked dried fish (about 0.17lbs)
  • ½ cup palm oil
  • 2 tsps stock
  • Salt to taste
  • 1 tbsp Iru (fermented locust beans also called dawa dawa) (optional)
  • 2-3 Boiled Eggs 

RECIPE PROCEDURE

  1. Cut the peppers, and 2 onion into small chunks, and blend roughly
  2. Boil the blended peppers on medium high heat till it reduces to a paste
  3. While the peppers are reducing, chop the last onion and set aside
  4. In a separate pot, heat your palm oil until it’s clear, then saute the chopped onion on medium heat till the onions turn slightly brown. 
  5. Add in the cleaned smoked dried fish, and continue to cook for another 10 minutes.
  6. Add in the reduced pepper paste, turn the heat down to low-medium, and continue cooking for 10 minutes. Add your meat and stock and continue cooking for another 15 minutes.
  7. After 15 minutes of cooking, add in the iru (dawa dawa) and boiled eggs, stir, and continue cooking for about 10 minutes until the stew separates from the oil.
  8. Serve with boiled ofada rice or white rice.
